Ingredients
- 2tbs Original Whirl Butter Alternative
- 2tbs Lion American Style Smokey BBQ Sauce
- 1 onion, chopped
- 1 garlic, chopped
- 1 leek, chopped
- 100g mushrooms, sliced
- 1 sweet potato, chunked and part-cooked
- 1 red pepper, diced
- 1 tin black beans, drained

Method
Heat the Original Whirl Butter Alternative over medium heat in a heavy bottomed pan. Add the onion and garlic sauté for about 3 minutes before adding the chopped leek cooking for a further 2 minutes.
Now add the mushrooms cooking for about 3 minutes before adding all the potato chunks and red pepper.
Fry over medium to high heat to brown the potatoes stirring as required to stop it catching on the pan. When they are cooked add the black beans and the Lion American Style Smokey BBQ Sauce warm through.
