Piri Piri Aubergine Salad

Ingredients
- 2tbs Original Whirl Butter Alternative
- 2tbs Lion Medium Piri Piri Sauce or Lion Hot Piri Piri Sauce
- 2tbs Lion Chipotle Mayo or Premium Vegan Mayo
- 2 large aubergines cut into 2cm chunks
- 1 grated carrot
- 40g rocket
- 2 chopped spring onions
- 1 pack pre-cooked quinoa mix
- 1 pack cooked & chopped chestnuts
- 2tbs toasted sunflower seeds
Products Used: Original Whirl , Lion Hot Piri Piri Sauce , Lion Premium Vegan Mayo , Lion Medium Piri Piri Sauce
Method
Pre-heat the oven to 180°C/350°F/Gas Mark 4.
Score each end of the aubergines and brush all sides with Original Whirl Butter Alternative.
Place them on a baking tray and oven bake for 10 minutes. Remove and brush both ends with Lion Piri Piri Sauce bake for a further 15-20 minutes until tender, turning half way through.
Place the rocket on the serving plate followed by the grated carrots, chopped chestnuts and cooked quinoa mix as per instructions.
Place the baked aubergines on top and sprinkle with chopped spring onion and toasted sunflower seeds.
Finish with a drizzle of Lion Chipotle Mayo or Lion Premium Vegan Mayo.
