Garlic & Herb Bruschetta

Ingredients
- 2tbs Garlic & Herb Whirl + 1tsp for the tomato topping
- 6 slices of diagonal cut ciabatta or baguette (make it GF if required)
- 4lg ripe tomatoes diced with core removed
- 3tbs chopped basil leaves
- 1tsp balsamic vinegar
- Salt and pepper to taste

Method
Pre-heat the oven to 180°C/350°F/Gas Mark 4.
Brush both side of the bread slices with Garlic & Herb Whirl Butter Alternative place on a baking tray and bake for 8-12 minutes till golden and crisp turning half way through.
Place 1tsp of Garlic & Herb Whirl Butter Alternative, chopped tomatoes, basil, and balsamic vinegar in a bowl mix well season with some salt and freshly ground black pepper. you can make this ahead of time to allow the flavours to infuse.
Just before serving spoon the tomato mixture on to the toasted bread slices and serve immediately.
