Pesto Cranberry & Papaya Panini

Ingredients
- 100g Original Whirl
- 40g rocket
- 40g walnuts
- 2 garlic cloves
- 40g parmesan cheese
- Freshly ground black pepper to taste
- 2 panini rolls
- 2tsp cranberry sauce
- 2tbs of dried cranberries
- 1 papaya deseeded and sliced
- 1 mozzarella ball sliced

Method
Place the Original Whirl, garlic, rocket, walnuts, parmesan and freshly ground black pepper in a food processor and blend until the ingredients are of a pesto consistency.
Cut open the panini rolls and spread the pesto on one of the inner sides of each panini and the cranberry sauce on the other side - sprinkle with the cranberries.
Top with the sliced papaya and mozzarella, place in the panini grill for about 6 minutes until the cheese has melted and the panini is warm and crisp.
Serve with some fresh seasonal salad leaves.
