4tbs Whirl Original
1 chopped onion
2 chopped garlic cloves
4-6 leaves of white cabbage chopped
1 chopped leek
2 chopped carrots
1 green, red and yellow pepper sliced
2 celery stalks, sliced
400g can chopped tomatoes
2tbs tomato puree
2 chopped courgettes
1.5L vegetable stock (GF)
400g kidney beans, washed and drained
2tbs dried oregano
1tbs dried Marjoram
1/4tsp smoked paprika
Optional 100g soup pasta of your choice (GF)
Sea salt and pepper to taste
100g freshly grated hard cheese for serving
Original Whirl in a large saucepan add the onions, garlic, celery, carrots and peppers. Sauté over gentle heat for 10 minutes.
Stir in the remaining vegetables, dried herbs, smoked paprika, tomatoes, tomato puree, sugar and stock. Bring to a boil, cover and simmer for 20 minutes.
Add the kidney beans and simmer for a further 10 minutes until the vegetables are tender. Season with Sea salt and pepper to taste.
If you are adding pasta, add for the last 3-5 minutes of cooking depending on the size of the pasta.
Spoon into individual bowls and sprinkle with the grated hard cheese.
