French Onion Soup

Ingredients
- 3tbs Original Whirl
- 1kg onions halved and sliced
- 4 cloves garlic chopped
- 1.2L hot strong beef flavoured stock (vegetarian)
- 300ml dry white wine
- 2tsp dried thyme
- 2 bay leaves
- 1tsp sugar
- 2tsp plain flour
- Sea salt and pepper to taste

Method
Heat the Original Whirl in a large saucepan, add the onions and fry gently for 20 minutes, stirring every 5 minutes until the onions have softened.
Increase the heat to medium high and add the sugar, thyme and a pinch of salt and pepper. Continue cooking for 15 minute. The onions will be golden brown and the base of the pan will brown giving the colour and flavour required for this traditional soup.
Add the garlic and flour and mix through to thicken slightly.
Deglaze the pan with the wine, stir in the stock and bay leaves then bring to a boil. Simmer for 40 minutes then season with salt and pepper if required.
Top with grilled garlic cheese baguette slices.
