Creamy Polenta Mash

- Cooking Time: 40 minutes
- 50g Lion Thousand Island Dressing
- 2tbs Original Whirl Butter Alternative
- 100g polenta
- 400ml water
- 50g grated vegan hard cheese
- Black pepper to taste
Bring the water to a boil in a heavy bottom saucepan.
Stir in the polenta and whisk well to avoid any lumps. Bring back to the boil.
Lower the heat and gently simmer for 30 minutes, stirring occasionally, scrapping the bottom and sides to make sure it doesn’t stick.
When the polenta is cooked, add the Original Whirl Butter Alternative, Lion Thousand island Dressing and the vegan hard cheese, stirring well.
If it becomes too thick, add a little boiling water to loosen.
