Griddled Pear, Date and Walnut Summer Salad with Blue Cheese Dressing

- 6 tablespoons of Lion Blue Cheese Dressing
- 1tbs Ghee-licious or Whirl butter alternative
- 1 ripe pear sliced lengthways tossed in lime juice
- 1 bag rocket and watercress salad
- 40g toasted walnuts
- 6 dates stoned and sliced
- 60g blue cheese
Heat the Ghee-licious in a griddle pan over medium to high heat, add the slices of pear and cook for 1 minute on each side set aside to cool.
Place the mixed green leaves in a bowl and add the sliced dates, the cooled griddled pear, walnuts and 3 tablespoons of the blue cheese dressing.
Arrange on two serving plate/bowls, crumble the blue cheese over the top and finish with a drizzle of the remaining dressing.
