Baked Cauliflower Katsu Curry

- 300g Lion Katsu Curry Cooking Sauce
- 2tbs Original Whirl Butter Alternative
- 2 small cauliflowers cauliflower
- 1 pack of chopped Swiss chard
- Sea salt and fresh ground pepper
- Fresh chopped coriander to serve
Pre-heat the oven to 180°C/350°F/Gas Mark 4. Line a large baking tray with parchment paper.
Bring a large saucepan of salted water to the boil and cook the cauliflower whole for 3 minutes.
Drain the cauliflower and cool slightly then brush with Original Whirl Butter Alternative.
Bake for 10 minutes remove from the oven and cover the whole of the cauliflower in the Lion Katsu Curry Cooking Sauce. Bake for a further 10 – 15 minutes until golden and crisp.
Sauté the chopped Swiss chard for a couple of minutes till wilted season with a little salt and pepper the place on the serving plates.
Place the baked cauliflower on top.
Serve with a sprinkle of chopped coriander.
