Watermelon Salad

- Watermelon cut in a large dice
- Ripe avocado diced
- Broccoli florets
- Diced mango
- Lion Mango & Lime Piri Piri Sauce
- Vegan feta cheese
- 30g Pumpkin seeds.
- Olive oil
- 1 tsp Piri piri spice mix
- Fresh mint leaves to garnish
Place broccoli florets on a roasting tray and drizzle with a lille olive oil.
Roast at 180 degrees for 8min or till florets are golden brown. Allow to cool. In a frying pan add a dash of oil and put on a medium heat. Add pumpkin seeds and piri piri spice mix. Turning frequently, cook till seeds pop and crack and look golden brown. Set aside.
In a large bowl add all ingredients then drizzle 1 tbsp of Lion Mango & Lime Piri Piri Sauce. Garnish with toasted pumpkin seeds and freah mint.
