Sweet Potato Curry Soup

- 500g Lion Korma Cooking Sauce
- 1 tin coconut milk
- 2 sweet potatoes (peeled and cubed)
- 1 tin chickpeas
- 50g spinach leaves
- Chopped red or green chillies optional
Put the Lion Korma Cooking Sauce, coconut milk, sweet potato and chickpeas in a large pan bring to a boil and simmer for 20 to 25 minutes till the potato is soft
Add some chopped green or red chillies if you want it spicy
When the potatoes are cooked add the spinach to wilt through before serving. If you prefer a smooth soup use a blending stick to puree it before adding the spinach
Serve with some fresh chapati or naan bread
