Lion Chipotle Mayo

P10652 AAK 199 Spiced Crunchy Noodle Slaw Header
  • 2tbs Lion Chipotle Mayo
  • 2tbs Lion Thai Sweet Chilli Sauce
  • 2tbs white wine vinegar
  • 2tbs sesame oil
  • 1 pack of ramen noodles (wheat)
  • ½ a sweetheart cabbage shredded
  • 3 carrots grated
  • 1 large onion finely sliced
  • 100g almond slices
  • 100g sunflower seeds
Products Used:
  1. Pre-heat the oven to 180°C/350°F/Gas Mark 4 and bake the crushed noodles for about 5 -8 minutes to brown slightly.

  2. On separate trays roast the sunflower seeds and the almond slices, removing them from the oven when they are lightly coloured. Save a small amount of the nuts and seeds to use as a topping.

  3. To make the dressing whisk the Lion Thai Sweet Chilli Sauce, white wine vinegar, sesame oil and the seasoning from the ramen noodles all together.

  4. In a large bowl mix the onions, carrots, cabbage and the dressing together.

  5. Add the roasted seeds, nuts and noodles just before serving to retain the crunch.

  6. Serve with a drizzle of Lion Chipotle Mayo and the remaining roasted seeds and nuts.
