Scrambled Tofu Breakfast Burrito

- 100g Extra Firm Tofu
- Pinch Turmeric
- Pinch Salt
- 50g Chopped Mushrooms
- 2 Tomatoes, sliced
- 100g Precooked Mexican rice
- 50g Cubed Potatoes
- 2 tbsp. Lion Cool Salsa Sauce
- ½ Chopped red chilli
- 20g Chopped Coriander
- 2 tbsp. Lion Sour Cream & Chive Dressing
- 1 Large flour tortilla
Warm a little oil in a frying pan over a medium heat
Add the cubed potatoes and fry until just starting to turn golden
In a separate pan heat a little oil and add the crumbled tofu with the pinch of turmeric
Add the mushrooms and sliced tomatoes to the pan of potatoes
Fry together until the all the items are cooked
In a separate pan warm the Lion Cool Salsa Sauce, chilli and chopped coriander
Layer up the tortilla with the Lion Cool Salsa Sauce, hot Mexican rice, scrambled tofu, sautéed vegetables and top with the Lion Sour Cream & Chive Dressing
Fold the tortilla into a burrito fold and serve wrapped in foil to keep warm
