Honey & Mustard Glazed Baked Ham

- 100g Lion Honey & Mustard Dressing
- 2tbs Honey
- 1.5kg Gammon Joint
- 6 Peppercorns
- 6 Juniper Berries
- 2 Bay Leaves
- 1 Onion
- 4 Cloves
- 12 Cloves for Baking
Place all the ingredients apart from the Lion Honey & Mustard Dressing and the 12 cloves in a large pan of cold water and bring to the boil simmer for 75 minutes.
Pre-heat the oven to 200°C/400°F/Gas Mark 6.
Drain and place the gammon on a rack in a roasting pan. Remove the rind and some of the fat and score with a sharp knife
Mix the honey and the honey and mustard dressing together and brush it all over the gammon. Stud with the cloves.
Bake in a fairly hot oven for 15 minutes until the glaze is golden and crisp.
