Dirty Loaded Vegan Chilli Fries

- 2tbs Lion Hot Piri Piri Sauce
- 4tbs Lion Premium Vegan Mayo
- 400g French Fries
- 2tbs Tomato Puree
- 1 Can of Kidney Beans rinsed and drained
- 1 Can of Pinto or Cannelloni Beans rinsed and drained
- 1tsp Smoked Paprika
- 1tbs Oregano
- 1 Diced Red Onion
- 4 Diced Tomatoes
- 2 Diced Avocados
- 200g Vegan Grated Cheese
- 8 Jalapeno Slices
- 2 Chopped Carrots
- 2 Celery Stalks Finely Chopped
- 2 Crushed Garlic Cloves
Pre-heat the grill to medium-high.
Mix the Lion Hot Piri Piri Sauce and Lion Premium Vegan Mayo together.
Heat the oil in a large pan sauté the onion, celery, garlic, peppers and carrot stirring occasionally for 5 minutes
Add the Lion Hot Piri Piri Sauce, tomatoes, tomato puree, beans, smoked paprika and the oregano bring to a boil and simmer for 15-20 minutes until the carrots are tender season with a little salt and pepper if required.
Place the freshly cooked French fries on a baking tray and top with the vegan chilli, red onion, tomatoes, avocadoes and grated cheese. Place under the hot grill until the cheese has melted
Remove from the grill drizzle with the Piri Piri mayo and garnish with the jalapenos.
