Lion Mango & Lime Piri Piri Sauce

Watermelon Salad
  • Watermelon cut in a large dice
  • Ripe avocado diced
  • Broccoli florets
  • Diced mango
  • Lion Mango & Lime Piri Piri Sauce
  • Vegan feta cheese
  • 30g Pumpkin seeds.
  • Olive oil
  • 1 tsp Piri piri spice mix
  • Fresh mint leaves to garnish
  1. Place broccoli florets on a roasting tray and drizzle with a lille olive oil.

  2. Roast at 180 degrees for 8min or till florets are golden brown. Allow to cool. In a frying pan add a dash of oil and put on a medium heat. Add pumpkin seeds and piri piri spice mix. Turning frequently, cook till seeds pop and crack and look golden brown. Set aside.

  3. In a large bowl add all ingredients then drizzle 1 tbsp of Lion Mango & Lime Piri Piri Sauce. Garnish with toasted pumpkin seeds and freah mint.
