Lioness Buddha Bowl

- Cooking Time: 15 minutes
- 4tbs Lion Caesar Dressing
- 250g cooked quinoa or brown rice
- 400g tin chickpeas drained
- 1 pack salad beetroot cut into chunks
- 2 red peppers cubed
- 2 courgettes cubed
- 6 radishes sliced
- 50g sliced romaine lettuce
- 100g toasted cashew nuts
Put the Lion Caesar Dressing in a pot and place in the centre or to the side of a large shallow bowl.
Arrange each ingredient individually, placing them next to each other in the bowl so that the colours of each item stand out.
If desired sprinkle with some Parsley & Garlic Croutons
