Lion Honey & Mustard Dressing

Honey and Mustard Glazed Baked Ham Lion Honey Mustard
  • 100g Lion Honey & Mustard Dressing
  • 2tbs Honey
  • 1.5kg Gammon Joint
  • 6 Peppercorns
  • 6 Juniper Berries
  • 2 Bay Leaves
  • 1 Onion
  • 4 Cloves
  • 12 Cloves for Baking
  1. Place all the ingredients apart from the Lion Honey & Mustard Dressing and the 12 cloves in a large pan of cold water and bring to the boil simmer for 75 minutes.

  2. Pre-heat the oven to 200°C/400°F/Gas Mark 6.

  3. Drain and place the gammon on a rack in a roasting pan. Remove the rind and some of the fat and score with a sharp knife

  4. Mix the honey and the honey and mustard dressing together and brush it all over the gammon. Stud with the cloves.

  5. Bake in a fairly hot oven for 15 minutes until the glaze is golden and crisp.
