Prep Premium Toasted Sesame Oil

Ingredients
  • 500g king prawns, peeled and de-veined
  • 1tbsp Prep Premium Toasted Sesame Oil
  • Sea salt and black pepper to taste
  • For the salad:
  • 20 mangetout, trimmed
  • 140g oyster mushrooms, cleaned and quartered
  • 1 red pepper, julienned
  • 2 spring onion, trimmed and finely sliced
  • 1 large red chilli, deseeded and finely sliced
  • 1 bulb fennel, finely sliced
  • 30g coriander leaves
  • Sea salt and black pepper to taste
  • Toasted Sesame Oil Dressing:
  • 3tbsp olive oil
  • 1 tbsp Prep Premium Toasted Sesame Oil
  • 1 tbsp soy sauce
  • 2 tbsp lime juice
  • 1tsp sugar
  • 1tsp fresh ginger, grated
  • Sea salt and black pepper to taste
  • Garnish:
  • 3 tbsp toasted sesame seeds
Method
  1. To make the dressing, combine all ingredients and season to taste. Refrigerate until needed.

  2. Blanch the mangetout in boiling water and refresh, slice in half lengthways and put in a bowl along with the rest of the ingredients. Add the dressing and toss everything together, season to taste.

  3. Marinate the prawns in the Prep Premium Toasted Sesame Oil and season with salt and pepper. Place on a pre-heated chargrill and cook through. To serve, combine prawns with the salad and sprinkle with toasted sesame seeds.
