Chargrilled Mediterranean Prawns with Toasted Sesame Oil Dressing

- 30ml Prep Premium Toasted Sesame Oil
- 15ml Prep Premium Extra Virgin Olive Oil
- 500g king prawns
- Sea salt and pepper
- 20 mangetout, trimmed
- 150g oyster mushrooms
- 1 red pepper, sliced
- 2 spring onions, chopped
- 1 red chilli deseeded, finely sliced
- 1 bulb fennel, finely sliced
- 30g coriander leaves chopped
- 30ml light soy sauce
- 30ml lime juice
- 15g sugar
- 15g fresh grated ginger
- 30g toasted sesame seeds to garnish
To make the dressing, combine 15ml Prep Premium Toasted Sesame Oil, the Prep Premium Extra Virgin Olive Oil, soy sauce, lime juice, sugar, grated ginger, and a little salt and pepper to taste.
Blanch the mangetout in boiling water then cool in cold water, slice in half lengthways and put in a bowl along with the oyster mushrooms, red pepper, spring onions, chilli, fennel and chopped coriander.
Add the dressing and toss everything together, season to taste.
Marinate the prawns in the remaining Prep Premium Toasted Sesame Oil and season with salt and pepper. Place on a pre-heated chargrill and cook through. To serve, combine prawns with the salad and sprinkle with toasted sesame seeds.
