Balsamic BBQ Spare Ribs

- Ribs:
- 15ml Prep Premium Extra Virgin Olive Oil
- 60ml Prep Premium Balsamic Vinegar
- 1.8kg spare ribs
- 1 onion, chopped
- 250ml tomato puree
- 60ml Lion Tomato Sauce
- juice of 1 lime
- 15ml Worcestershire sauce
- 15ml mustard
- 50g brown sugar
- 15g garlic powder
- Spice Mix:
- 3tbsp paprika
- 2 tbsp salt
- 2 tbsp dried parsley
- 2 tsp onion powder
Preheat the oven to 180°C. Line a large baking sheet with extra-strong aluminum foil. Place the grill grate inside.
Mix all the ingredients for the spice mix together. Rub ribs all over with spice mixture. Place meaty side up on the grill rack and bake for 1 hour.
For the BBQ sauce, fry chopped onions in a tablespoon of Prep Premium Extra Virgin Olive Oil over a low heat until translucent and browning. Let it boil down with the Prep Premium Balsamic Vinegar for approx. 3 minutes. Add tomato puree, Lion Tomato Sauce, lime juice, Worcestershire sauce, and mustard. Stir well. Add brown sugar and garlic powder. Cook over a low heat for 10 minutes.
Remove the ribs from the over and drain the fat. Flip them over and lightly brush with the BBQ sauce. Then flip over again and pour the remaining BBQ sauce evenly over it so that everything is completely covered. Cover with extra-strong aluminium foil.
Bake ribs for another 1 hour. Open the foil and bake for another 10-15 minutes till browning and the meat should easily detach from the ends of the bones.
Let the ribs rest for at least 10 minutes before serving.
