Slice each of the potatoes with a sharp knife, leaving a few millimeters gap between each slice and making sure you don’t slice all the way through the potato. (insert a skewer into the bottom of the potato or place the potato between 2 chop sticks to ensure you don't cut through the potato).
Place the potatoes on a baking tray, cut side up, and brush each one with the Whirl Butter Alternative, coating as much as possible and allowing to drizzle into the cuts.
Add the sprigs of thyme and the garlic cloves, sprinkle with some salt flakes and bake for 50-60 minutes until golden and crisp. Baste half-way through cooking for a crispier finish.
