Lion Lion Habanero Hot Sauce

Lion Bean Avocado Enchilada Habanero Cool Salsa 6
Ingredients
  • 500g Cooked plain rice
  • 200g Mixed beans, drained and rinsed
  • 50g Diced onion
  • 1 Red Chilli diced
  • 1 tbsp Lion Habanero Sauce
  • 1 Avocado
  • 50g Grated mozzarella
  • 100ml Lion Cool Salsa
  • 2 Large flour tortillas
  • 1 Lime
Method
  1. Preheat the oven to 180 degrees

  2. Fry the diced onion in a shallow frying pan until softened

  3. Add he red chilli, mixed beans and cooked rice

  4. Heat through for 2-3 minutes then add in the Lion Habanero Sauce

  5. Slice the avocado

  6. Fill the tortillas with the hot rice mix and layer on the sliced avocado

  7. Roll up (leaving the ends open) and place in an oven proof dish

  8. Top with the Lion Cool Salsa and grated mozzarelle

  9. Bake in the oven for 15 minutes until the cheese has melted and tortillas are starting to turn golden on the edges

  10. Serve immediately with a wedge of lime
