Mushroom Burger
  • 4 Field mushrooms
  • 4 Aubergine slices Beef tomato sliced into
  • 4 Sweet potatoes chipped Brioche buns
  • Unsalted Whirl
  • Lion Vegan Thousand Island Dressing
  1. Brush mushrooms (stems removed) and aubergine slices with Unsalted Whirl, add to a large frying pan ad cook till golden and soft.

  2. Drizzle a little Unsalted Whirl over sweet potatoes then arrange on a roasting tray. Place in a hot oven and cook till coloured and soft.

  3. Alternately layer the tomato, aubergine and mushroom with a Lion Vegan Thousand Island Dressing in the brioche bun. Secure lid with a wooden skewer and serve with the sweet potato fries.
