Prep Premium Basil Infused Oil

Ricotta and spinach tortellini with basil infused oil
Ingredients
  • 3 Large pieces of dried tomatoes
  • 250g tortellini with spinach and ricotta filling
  • Prep Premium Basil Infused Oil
  • 25g pine nuts
  • A few basil leaves
  • Parmigiano Reggiano (if desired)
Method
  1. Finely chop the tomato pieces, cook the tortellini according to the instructions on the Package, drain well, mix with a little basil oil.

  2. Top with roasted pine nuts, tomatoes and basil, and grated Parmesan. Serve while still hot.
